Make Ahead Meal: Onion Tomato Curry
Made J a nice portable paleo breakfast this morning (microwave spinach frittata “muffin”, which I was too sleepy to photograph) so I thought I’d go ahead and make freezer meals for the rest of the week.
Carrots, sweet potatoes, tomatoes and onions swimming in my favorite spices. On a work day, I could just pop it in the microwave with eggs for yet another “muffin” or add some protein and wilted greens for a power lunch.
No more chopping when I’m in a hurry.
